Precision-forged from a single piece of high-carbon steel, it's from their Classic series and features a full tang with a triple-riveted, high-impact polypropylene handle.Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long. | | | Features: | |

• Alternating hollows on blade's sides prevent food from clinging

Simply the bestMay 25, 2004
I got this beauty a few days ago (now they seem to have sold out). It is pricey: yes. But worth every penny. This is an investment for a lifetime. The knife is perfectly balanced, with a good weight, but distrubuted so evenly that one barely notices the weight -- except when one cuts, that is ... because the amazingly sharp edge, combined with the weight glides the knife flawlessly through anything one may throw at it.

most versatile knife of all time!Dec 31, 2011
By Bet123 I have a good collection of Wusthof knives. this one is light and easy to handle, and useful for a lot of different situations. I think after my chef's knife and paring knife, this is what I use the most.
