Buyer beware, it's not the same as it used to beOct 28, 2007
By Jean P. I can't really "review" this pan since I returned it unused, but I have the "same" All-Clad Petit Roti Pan from just a couple of years ago, and this one is now substantially different. My old one had a flat bottom, great for making gravy after you finished your roast. This new one has a ridge around the bottom, where the juices will drip off into these sides. Very difficult to make a gravy when that happens. This is just my opinion as a cook, I really can't comment otherwise on the product, but this change alone was enough for me to send the pan back.

I also own its big brother and both pans work extremely well. Efficient, even heating. Upright handles make the pan easier to lift. Solid, heavy contruction. I like going from oven to stove top for making gravy. Easy to clean (dishwasher safe).
Worth the price for All Clad quality and the perfect roasted bird.
Update 1/7/07: This pan does not work on induction cooktops

As an earlier reviewer noted, this pan does not have a flat bottom. This flaw renders the pan completely useless on the stove top. I tried twice on my gas range to sear and braise with this and it failed miserably. First was a chuck roast and second was a mess of meatballs. Any oil will just wick off the middle and settle along the edges, burning the target food. This also happened when I roasted a leg of lamb. The middle "fond" was burnt to a crisp while the juices settled in the ridges on the outside. The pan is stained and no longer looks new (after only about 5 used). The only thing that turned out well was s roasted glazed pork tenderloin and only because I used parchment paper on the bottom. I wanted a vessel that I could sear, braise and roast. This pan can only do the ladder (poorly) and for the price it's better to go with something cheaper until All Clad can go back to the original design. I received it as a gift and used it a few times so it's late in the game to return, but if you want versatility in a roaster (at this price you should!!) look elsewhere.

I got this pan for Christmas and used it that day for the turkey breast roast. It is perfect for smaller families who don't plan to cook the 30 pound turkey or a huge standing rib roast. I can't imagine cooking anything that would require a bigger pan. It fits easily into the oven, cleans up in a breeze and matches all my other All Clad stainless pots and pans. Many years ago a chef told me that All Clad was the best and I have never been disappointed.

Let me start by saying I'm a big fan of All-Clad. They have a well-deserved reputation for durability and performance. My All-Clad saute pans are the pride of my kitchen. However even though this product wears the All-Clad label, it isn't actually clad! As you probably know, All-Clad pioneered bonded cookware. Stainless steel is durable and doesn't interact with food, but conducts heat relatively poorly. Aluminum is lightweight and a wonderful heat conductor but scratches easily and interacts with food. By putting the aluminum layer inside protective layers of stainless steel you get the best of both.
If you go to the All-Clad site itself you can see at [...] "this item is manufactured overseas", and at [...] you can see "Lids and non-bonded items manufactured overseas." In other words this roasting pan is NOT bonded.
I bought this pan a few years ago, and recently replaced it with the Calphalon roasting pan of the same size that IS bonded. The Calphalon pan is a lot lighter because it has aluminum inside. The All-Clad is very sturdy feeling, but that sturdiness made out of stainless steel makes it heavy.
A second problem with this pan is the shape of the bottom. Rather than being flat, imagine drawing a rectangle on the bottom covering maybe 90% of the area and then raising that rectangle. You'll get the bottom of this pan. This means most of the bottom isn't in contact with the stove if you have a flat stovetop or even electric burners; probably won't matter for gas. More importantly to me, if you want to make a pan gravy you're going to have problems deglazing and reducing evenly.
